For several weeks now, I’ve only been able to access half of my Pandora stations (A-M) via my Legrand app. Stations M-Z are available on the Pandora app, but not when I pull up Legrand. Tried updating/reinstalling both apps already. This is also happening across multiple devices using the same account.

We're aware of this behavior and our engineers have been investigating. I've included your info on our ticket for this.
In the meantime, you should still be able to search for the stations that don't appear on your Onkyo list.
